While the idea behind these fighting games is cool, it's practice they need to water down the powerhouses' abilities for game balance reasons, so it ends up being silly.

Superman, for example, should be able to own everyone on the MK team effortlessly, but now he's going to be trading punches with Liu Kang or something.

You've got a point there... but the game was made not to show which side is stronger nor what hero can own the rest of the characters. It was made to enjoy every familiar characters we see from both worlds and to experience the thrill of how it feels like for Sub-zero to be in Metropolis or Batman at the Mortal Kombat Arena.
